Festive Choc Chip Shortbread Star Cookies

Our activity calendar this week kick started on Monday with ‘Bake Cookies’ so I knew I had to find a special cookie recipe to please this little brood and make it Christmassy!!!

I found a very basic shortbread recipe and customised it to suit our needs. these were a massive hit. So much so I have a new batch in the oven for movie night tonight!!

So enjoy.

The Ingredients

125g butter
55g sugar (and a little extra for sprinkling)
180g flour (self raising or plain works)
1/2 tbsp Vanilla extract
60g choc chips (I use 30g dark and 30g milk)
15g Christmas sprinkles ( we used stars in festive colours)

The method

Put the soft, room temp butter in a mixing bool and mix until soft and fluffy. Add in the sugar and combine well before adding vanilla.

Once well blended drop in small batches of flour at a time and mix well util all flour is combined.

Throw in your choc chips and sprinkles and knead the dough until smooth and formed into a ball.
Wrap in cling film and place in the fridge for 30 minutes to rest and firm up.

If you are using a cutter, roll out your dough on a floured surface, roll to about 1.5cm thick, cut your cookies and lay on baking paper on a baking tray.

If you prefer cookies to be round and simple, then roll the ball into a long log about 2 inches in diameter, wrap in cling film again and freeze until the dough is very firm. You can slice off your 1.5cm thick cookies when it is and place on a tray.

Sprinkle the cookies with caster sugar and place in an oven around gas mark 5 for 15- 20 minutes. Until they start to golden lightly.

Remove and allow to cool before serving.

When you bite these babies, you will see all the lovely sprinkles and chocolate and they are just the perfect amount of yum!!!
