
A ridiculously easy 2-ingredient festive treat.
Sometimes the best Christmas recipes are the ones that barely count as recipes at all β and this Mixed Nut Brittle is one of those perfect little last-minute sweets. Just sugar and nuts, melted together into a golden crackling sheet of caramel goodness. No faff, no thermometer, no fancy ingredients.
It looks gorgeous broken into rustic shards and tucked into a jar (as you can see from my photos!), and it tastes like old-fashioned sweet-shop candy. Perfect for gifting, nibbling, or leaving out for Santa if heβs partial to a wee homemade crunch.
β¨ Mixed Nut Brittle
Makes: 1 tray
Time: 10 minutes cooking, 15β20 minutes cooling
Difficulty: Silly easy
π₯ Ingredients
β’ 2 cups sugar
β’ 1 cup chopped mixed nuts (salted, unsalted, or a mix β whatever you like)

π₯ Method
1. Prepare the tray
Line a baking tray with parchment and keep it ready.
2. Melt the sugar
Add the sugar to a heavy-bottomed pan.
Heat gently, letting it melt slowly β DO NOT stir.
Swirl the pan now and then until it turns a rich golden amber.
3. Add the nuts
Once the sugar has fully melted and coloured, quickly tip in the chopped nuts and give a fast stir to coat.
4. Pour & spread
Pour the mixture onto your prepared tray.
Spread lightly with a spatula β donβt press flat.
5. Cool & snap
Let it cool completely, then break into brittle shards.
Store in a jar (or eat half immediately β no judgement).
β€οΈ Notes
β’ Use any nuts you like: peanuts, almonds, cashews, walnuts.
β’ Stir in a pinch of salt or cinnamon for a festive touch.
β’ Dip corners in chocolate to make it fancy.
β’ Brittle keeps for 1β2 weeks in a sealed jar.
